MAMPAR

Mampar je jelo iz ujgurske kuhinje. To je regija u severozapadnoj Kini. Osim tamo, jelo se pravi i u okolnim zemljama sa muslimanskim stanovništvom, kakvo su i Ujguri.


Sastojci:                                                                                                               

450 gr. vrlo sitno iseckanog (eventualno mlevenog) junećeg mesa                            

1 glavica crnog luka                                                                                                                 

1 šargarepa                                                                                                                               

1 krompir                                                                                                                                          

1 kašika paradajz paste ili 1 svež naseckani paradajz                                                  

4 čena belog luka                                                                                                             

1 rotkva ili rotkvica                                                                                

 voda                                                                                                                                   

slatka aleva paprika, so, mleveni biber, svež seckani korijander-sve po ukusu                               

za testeninu:                                                                                                                 

200 gr.brašna, 1jaje                                                                                                                                               

50 ml.vode                                                                                                 

oko pola kašičice soli ili po ukusu


Priprema:

Sitno naseckano meso se propržite na malo ulja, pa mu dodajte jedno po jedno, na kockice naseckano, povrće, sve propržite uz mešanje oko 5 minuta, onda nalijte vodom i ostavite da se skuva povrće i meso.                                                                                 

Za to vreme napravite testo za rezanca, sjedinite sve sastojke u glatko testo i ostavite ga da se odmori 10 minuta.

Onda rastanjite testo na milimetar-dva debljine i isecite prvo na trake širine oko 1-1,5 cm. Onda popreko isecite te trake na kockice i stavite u vrijuću supu sa povrćem i mesom, neka se kuva još 5 minuta sve zajedno.

Poslužite vruće.
