JUŽNJAČKA PITA OD BATATA

Sastojci za testo:                                                                                                               

200 gr.brašna                                                                                                                

1 kašičica soli                                                                                                             

4 kašike hladnog putera isečenog na kockice                                                               

1 kašika šećera                                                                                                                          

4 kašike masti                                                                                                                      

60-100 ml.ledene vode


Priprema testa:

Sve sastojke sjediniti u posudi sa što manje dodirivanja prstima, da se puter ne bi zagrejao. Formirano testo zaviti u providnu foliju i staviti na pola sata u frižider.


Za fil:                                                                                                                               

700 gr.batata                                                                                                                       

1-2 kašičice cimeta                                                                                                       

1-2 kašičice muskatnog oraščića                                                       

sok od 1 limuna                                                                                                               

100 gr. šećera                                                                                                                    

3 jaja ( razdvojena žumanca od belanaca)                                                                           

4 kašike putera                                                                                                            

1 kašičica soli                                                                                                                       

3 kašike brašna                                                                                                            

150-180 ml.toplog mleka


Priprema:

Skuvati batat, pa od njega napraviti pire. Ostavite ga da se malo prohladi.

Puter otopiti, a žumanca umutiti sa šećerom.

Sipati pire od batata u vanglicu, pa redom dodavati začine-cimet, muskatni oraščić, sok od limuna, otopljeni puter, so, žumanca sa šećerom, brašno, toplo mleko, na kraju dodati neumućena belanca.

Stalno mešati da se sastojci sjedinjuju.                                                     

Sad izvaditi testo iz frižidera, malo ga premesiti, pa ga razvući na veličinu modle za pitu. Oklagijom ga prebaciti u modlu sa pek papirom, formirati ivicu od testa uz ivicu modle, testo mora da pokrije i strane modle, jer je fil tečan, da ne bi iscureo.

Dno testa izbockati viljuškom da se testo ne bi dizalo u rerni, staviti preko sredine testa pek papir, pa preko njega kamenčiće ili metalne kuglice da pritisnu testo.

Staviti u rernu da se peče desetak minuta na 180 stepeni.

Onda izvaditi testo, skloniti kamenčiće, pa naliti fil i vratiti u rernu da se peče oko pola sata, proveriti čačkalicom da li je gotovo.                                                                                       Prohlađenu pitu servirati uz burbon sos i šlag.




Za burbon sos treba:                                                                                                                 

100 ml.slatke pavlake                                                                                                        

2-3 kašike kisele pavlake                                                                                                  

50-100 gr. šećera po ukusu                                                                            

½ čaše hladne vode                                                                                                 

2 kafene kašičice nekog slatkog sirupa                                                                    

2 kašike burbon viskija


Priprema:                                                                                                                                             Neumućenu slatku i kiselu pavlaku sjediniti u šerpici, staviti na ringlu, na srednju temperaturu, da se zagreva do ključanja, onda tome dodati šećer rastvoren u vodi i slatki sirup, pa ostaviti da se kuva na tihoj vatri dok se ne redukuje i zgusne. Više puta tokom tog vremena promešati da ne zagori.

Kad je sos zgusnut dodati mu 2 kašike burbon viskija i dobro promešati.
